Lars Ulrich: "I always find that the first song you write for an album has a certain magic - and that was 'Enter Sandman', This song just has such a feel to it that we felt it should be the first new thing people heard. It's one of the easiest songs we've ever written. If you're gonna narrow it down, it's about nightmares from a little kid's point of view."
James Hetfield: "I can remember when I wrote the lyrics to 'Enter Sandman,'Bob Rock and Lars came to me and said, "These lyrics aren't as good as they could be." And that pissed me off so much. I was like, "F**k you. I'm the writer here!" But when I went back, I dug harder, and I came up with some stuff that obviously worked quite a bit better. That was really the first challenge from somebody else, and it really pissed me off -but it also made me work harder. From then on, I've thought twice about everything I've written. Now I re-write stuff over and over to get it right." (1998:Guitar World)
Lars Ulrich: "The whole intro, the verse, the bridge, the chorus -- it's the same riff." (1991)

James Hetfield: "I had been fiddling around with that B-G modulation for a long time. The idea for the opening came from a Venom song called "Buried Alive". The kick drum machine-gun part near the end wasn't written with the war lyrics in mind, it just came out that way. We started that album with Mike Clink as producer. He didn't work out so well, so we got Flemming to come over and save our asses." (1991:Guitar World)

One" is an anti-war song by the American heavy metal band Metallica. ..... The song is based on the idea of a soldier losing all of his limbs and being unable to hear, speak, or see, set to a World War I backdrop. In an interview in New Zealand in 1989, Ulrich describes the movie Johnny Got His Gun as having a similar theme, and this was the reason it was incorporated into the video.(Wikipedia)
The lyrics are based on the novel Johnny Got His Gun by Dalton Trumbo, which is about World War I. A specific passage that inspired the song is: "How could a man lose as much of himself as I have and still live? When a man buys a lottery ticket you never expect him to win because it's a million to one shot. But if he does win, you'll believe it because one in a million still leaves one. If I'd read about a guy like me in the paper I wouldn't believe it, cos it's a million to one. But a million to ONE always leaves one. I'd never expect it to happen to me because the odds of it happening are a million to one. But a million to one always leaves one. One." (Songfacts)

James Hetfield: "It's about being on the road, missing someone at home, but it was written in such a way, it connected with so many people, that it wasn't just about two people, it was about a connection with your higher power, lots of different things.
I remember going to the Hell's Angels Clubhouse in New York, and they showed me a film that they'd put together of one of the fallen brothers, and they were playing Nothing Else Matters. Wow. This means a lot more than me missing my chick, right? This is brotherhood. The army could use this song. It's pretty powerful.
At first I didn't even want to play it for the guys. I thought that Metallica could only be the four of us. These are songs about destroying things, head banging, bleeding for the crowd, whatever it is, as long as it wasn't about chicks and fast cars, even though that's what we liked. The song was about a girlfriend at the time. It turned out to be a pretty big song." (2008:Mojo)
[I]
Lead singer and rhythm guitarist James Hetfield wrote the song (credited to Hetfield/Ulrich in 1990 while he was on the phone with his then girlfriend. Since he held the phone with one hand, he plucked the four open strings of a standard E-minor chord with the other, which eventually made up the first two bars of the song. The lyrics, which talk about being "so close, no matter how far", were also dedicated to his girlfriend, indicating the bond they shared even when Hetfield was on tour. Initially, the song was not meant to be released, as Hetfield had written it for himself, but after drummer Lars Ulrich heard it, it was considered for the album. The song's demo was also called "Nothing Else Matters" and was recorded in Lars Ulrich's home musical studio "Dungeon" on August 13, 1990. (Wikipedia)

Written in the 17th century, wikipedia says it "is the tale of a highwayman or footpad who, after robbing a military or government official, is betrayed by a woman; whether she is his wife or sweetheart is not made clear". It is Metallica's most well known song they did not write. (LB)
